Indian
Cuisine is considered to be one of the three great distinctive
cuisines of the world, the other two being the Chinese and
the French.
Indian cuisine is characterized by its ingenious use of
many spices and herbs growing across the Indian subcontinent
and also for the widespread practice of vegetarianism across
its society. Considered by some to be one of the world's
most diverse cuisines, each family of this cuisine is distinguished
by a wide variety of dishes and cooking techniques. As a
consequence, Indian cuisine varies from region to region.
However, Indian cookery is generally divided into two main
categories: North Indian cuisine and South Indian cuisine.
North Indian Cuisine is characterized by a strong use of
milky products, flat breads ("roti" and "naan") and cooking
with a "tandoor" (a large and cylindrical coal-fired oven).
The presence of rice as staple food, the use of lentils
and mild spices (as opposed to the strong, pungent spices
used by North Indian cuisine) is distinctive of the South
Indian cuisine.
